Mexican Salad


I love Mexican food! The hotter, the better! I also happen to love salads so we made this delicious combination last night.

Mexican Salad

Ingredients:
Butter Lettuce
1 Can of Black Beans drained and rinsed
1 Cup of Corn (cut off the cob if possible but canned works too)
1 Red Pepper
Salsa- store bought, the best you can find
Red Onion
Low Fat Mexican Shredded Cheese
Red Pepper Flakes
Hot Sauce if desired
Chicken for the non-vegetarians
Olive oil
Olive Oil Spray
Salt and Pepper

Directions:
1. Spray the red pepper with Olive Oil Spray roast the red pepper in the oven under the broiler, turning every 5 minutes until outside is blackened. Let it cool and then slice into small pieces.
2. Boil Black Beans adding a pinch of red pepper flakes.
3. Saute red onion in olive oil and add the corn. Salt and pepper to taste and a bit more red pepper flakes if desired.
4. Cook chicken as desired.
5. Make a bed of lettuce, top with roasted red pepper, onions,corn and beans mixture, shredded cheese, and salsa. Add chicken.

DELICIOUS!!!
